Even saying hello and goodbye, have a nice day at the beginning and end of each class is something teachers appreciate. Writing a note in a journal is something you could do if you are uncomfortable saying it, or giving them a card. You could also just wait after class for everyone to leave to say you enjoyed the lesson today or you’re looking forward to what is going on tomorrow. I remember feeling similarly as a student, and I wish I did it more often, because it boosts the teacher’s spirits to know they are doing a good job for at least one student.
